RECIPES: Simple Red Cabbage Salad

Sometimes simple is good, really good. Recipe serves 4.

Ingredients

Salad

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • ¼ teaspoon pressed garlic
  • 1/8 teaspoon salt
  • 1 1/2 lbs red cabbage
  • ¼ cup finely grated asiago cheese
  • Freshly ground black pepper

Dressing

  • Whisk together olive oil, lemon juice, garlic and salt in a small bowl and set aside.

Preparation

  1. Wash the cabbage and pull away any bruised leaves.
  2. Cut the cabbage into quarters.
  3. Slice the cabbage as thinly as possible. (No sliver should be thicker than a quarter of an inch.)
  4. Repeat with 3 remaining wedges. Discard the white core.

Serving

- Toss the cabbage in a large serving bowl with a spoonful or two of the dressing.
- Add the asiago and toss to distribute evenly.
- Add more dressing as needed.
- Season with salt and freshly ground black pepper.
- Serve with Lemon Roasted Chicken Legs
