RECIPES: Simple Red Cabbage Salad

Ingredients
Salad
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- ¼ teaspoon pressed garlic
- 1/8 teaspoon salt
- 1 1/2 lbs red cabbage
- ¼ cup finely grated asiago cheese
- Freshly ground black pepper
Dressing
- Whisk together olive oil, lemon juice, garlic and salt in a small bowl and set aside.
Preparation
- Wash the cabbage and pull away any bruised leaves.
- Cut the cabbage into quarters.
- Slice the cabbage as thinly as possible. (No sliver should be thicker than a quarter of an inch.)
- Repeat with 3 remaining wedges. Discard the white core.
Serving
- Toss the cabbage in a large serving bowl with a spoonful or two of the dressing.
- Add the asiago and toss to distribute evenly.
- Add more dressing as needed.
- Season with salt and freshly ground black pepper.
- Serve with Lemon Roasted Chicken Legs
