RECIPE: A Meal in a Burger

- Preheat the broiler (or a grill if available!)
- Combine the beef egg yolk, chard, onions, salt, and pepper in a bowl and mix well. Form into four patties.
- Make an indentation into the center of each patty. Scooping out about a tablespoon of the meat mixture and fill it with the cheese. Cover the cheese with the reserved meat mixture and from a finished patty.
- Broil the patties on a baking sheet for 2 ½ minutes on each side for a juicy hamburger or longer according to taste (or on the grill if avaialable!)
- Build a burger on a bun or slices of whole grain bread, spread with mayonnaise and ketchup and topped with tomato slices.

Green Beans and Potato Salad with Extra Virgin Olive Oil
Serves 4
Ingredients
- 8 – 10 red potatoes
- 1 bag green beans
- 2 tablespoons olive oil
- 2 tablespoons chopped red onion
- 2 tablespoons chopped Italian parsley
Preparation
- Wash beans and snap off ends.
- Blanch in salted boiling water for 4 – 5 minutes or until done to taste. I like mine crisp but cooked. Drain, rinse with cold water and pat dry with paper towels.
- Wash potatoes, peel and quarter. Cook in boiling water for 8 minutes. Drain well.
- Whisk together olive oil, red onion and parsley.
- Drizzle dressing over potatoes and green beans. Toss to coat well. Salt and freshly ground black pepper to taste.
