RECIPE: French Lentil Soup with Kale and Sausage

Serves 4 – 6
Ingredients

  • 2 links sausage cut in ½ inch slices
  • 2 garlic cloves
  • 1 medium onion
  • 1 cup lentils picked over and rinsed well
  • 3 cups water
  • 1 – 3 cups chicken or vegetable broth
  • 1 small bunch kale or other leafy green, sliced thin, ribs discarded (about 4 cups)
  • 1 tablespoon balsamic or red-wine vinegar
  • Freshly grated Parmesan cheese to pass at the table

Preparation

  • In a 3 quart heavy saucepan brown sausage over moderate heat and transfer wit a slotted spoon to paper towels to drain. Add 1 tablespoon olive oil to pan. Cook garlic stirring until golden .
  • Add onion and cook, stirring until softened.
  • Add lentil, water, broth and sausage and simmer, covered, 30 minutes.(check and add more water or broth as needed)
  • Add kale and simmer, uncovered, until tender, 5 – 7 minutes longer.
  • Stir in vinegar. Add salt and freshly ground black pepper to taste.
