RECIPE: French Lentil Soup with Kale and Sausage

Ingredients
- 2 links sausage cut in ½ inch slices
- 2 garlic cloves
- 1 medium onion
- 1 cup lentils picked over and rinsed well
- 3 cups water
- 1 – 3 cups chicken or vegetable broth
- 1 small bunch kale or other leafy green, sliced thin, ribs discarded (about 4 cups)
- 1 tablespoon balsamic or red-wine vinegar
- Freshly grated Parmesan cheese to pass at the table
Preparation
- In a 3 quart heavy saucepan brown sausage over moderate heat and transfer wit a slotted spoon to paper towels to drain. Add 1 tablespoon olive oil to pan. Cook garlic stirring until golden .
- Add onion and cook, stirring until softened.
- Add lentil, water, broth and sausage and simmer, covered, 30 minutes.(check and add more water or broth as needed)
- Add kale and simmer, uncovered, until tender, 5 – 7 minutes longer.
- Stir in vinegar. Add salt and freshly ground black pepper to taste.
