KTC has opened a new market and cafe on Clements Ferry Road to help provide more local food to you! Our new location is facilitating the expansion of KTC by providing us with the opportunity to have more of the local food you love in stock! If you live in the area please stop by, do your shopping, and join us for lunch. If not, enjoy knowing that we will have more availability of all the products in our online market.
Also new to KTC is our Kitchen Table Consultation program. We would love to help you create healthy meals according to your preferences, and stock your pantry, fridge and freezer with KTC. Through Kitchen Table Consultation we will help you create 7 days of menus from breakfast to dinner, including using leftovers and prepared foods to make your life easier while eating healthier! Summertime…and the Veggies are Growing!
- Green Beans, Eggplant, Squash, and Cucumbers are finally here! You’ll find them in this week’s CSA bags, in the KTC Vegetable bags, at the Farm Store and at the Farmers Markets! Blackberries and Blueberries are also ripening now and are available through Our Local Foods.
- Beautiful Cut Flowers are also available at the Farmers Markets. Don’t forget—we’re at the Pawleys Island Market on Wednesdays, the Mount Pleasant Town Center Market on Saturdays, and the Downtown Charleston Market also on Saturdays. See you there!
- Other summer produce is still developing. We should start harvesting the tomatoes in two weeks. The cantaloups should be ready in two to three weeks. Watermelons and Okra will come later in the summer.
- Unfortunately, we weren’t able to grow Corn this year. If anyone is interested, we can get local but non-organic corn. Let us know if that’s something you’d be interested in!
Weather on the Farm
As you know, our area is experiencing drought conditions right now. So far, our fields are hanging in there and still producing strong…but we’re praying for rain! Keep your fingers crossed that we get some soon!

Items marked with an * are essentials that should be in your pantry or fridge in order to facilitate home cooked meals. You may find you really like umeboshi – it is an interesting change of pace for salad dressings and dips.
Umeboshi and umboshi vinegar: A tart salty plum, pickled with red shiso (Japanese basil) leaves. Often called ‘the king of alkaline foods’, umeboshi plums are an ancient Japanese health food used to balance and strengthen.
Highly valued for its antibacterial properties, a digestive aid, and also for hangovers or whenever the body feels depleted. Ideal for sushi, dips, sauces, and salad dressings.

We order in several fresh items each week such as the fresh trout fillets, clams, and goat cheese and we need to call those orders in by 8:00 am on Monday if we are going to have them for Tuesday delivery. News from the Farm
Garlic
The story of our farm-grown garlic- our garlic has been growing well throughout the winter and we’ve been able to harvest the delicately flavored green garlic for the last couple of weeks. We hope you’ve enjoyed the green garlic in your CSA and KTC vegetable bag
Our garlic has begun to flower—in the culinary world, these flower shoots are called scapes. This is the point where the garlic bulbs begin forming. Farmers like to remove the scapes so the plants put all their energy into forming the bulbs. Chefs consider scapes a delicacy as they are only available for a few short weeks. Maria’s inspired recipe takes advantage of the garlic scape season.
Fresh bulbed garlic has more moisture, subtlety of flavors and sweetness than what’s usually available at the grocery store. Our farm grown fresh bulbed garlic will be available in late May or early June.
Beets
Our beets are beginning to bulb up. Our CSA members will have fresh beets and fresh beet greens in a couple of weeks.
We should have beets for our KTC vegetable bags as well.
English Peas
Enlish Peas will be available in the vegetable bags next week.
Potatoes
We’ll be digging potatoes soon! The little red potatoes will be the first ones dug. We planted six different kinds of potatoes this year so our customers should look forward to trying multiple gourmet potato dishes this year!

Did Anyone See Adaptive Gardens in the Post and Courier Today?
Congratulations to Adaptive Gardens of the Lowcountry for a wonderful Earth Day celebration at MUSC yesterday. It’s wonderful to have Jodie, Leslie, and the kids be recognized for what they do together. There was a beautiful display of organic vegetable and herb starts for everyone to enjoy.
We’d also like to thank the community for all their support of Adaptive Gardens of the Lowcountry.

The Spring/Summer CSA has officially begun. Thank you to everyone who has subscribed to the CSA, we appreciate your support. Overall it was a wonderful first week. Thank you for your patience with the few bumps and bruises we had.
We hope to have strawberries in the bags as often as possible. Although we may not be able to have them every week, they are growing strong and looking good
The CSA bags for next week will include Swiss Chard, Red Russian Kale, Hakurai Turnips, French Breakfast Radishes, Strawberries, Broccoli Raab, Yellow Squash, a Spring Salad Mix, and Green Onion or Garlic.
As the season progresses the quantities will increases.

Appetizer Ideas
Grilled vegetables paired with goat cheese is one of our favorite appetizers. When the grill is already hot and the prosecco is being served – these are easy and delicious whether you are preparing for a crowd or just two. If you are are not eating bread, you can make these appetizers by simply spreading the goat cheese on the grilled zucchini, adding a layer of arugula and rolling each slice. Secure with toothpicks
Slice summer squash lengthwise into ¼ inch slices. Brush with olive oil and grill until lightly browned, 6 – 8 minutes total. Cut each slice into 1 inch pieces. Toast baguette slices in oven until lightly browned on each side. Spread with goat cheese and top with arugula and grilled yellow squash pieces. Drizzle sparingly with extra virgin olive oil and sprinkle lightly with salt and pepper.
